Mexican Rice

Ingredients

  • 1 onion, finely chopped
  • olive oil
  • 1 1/2 cups boiling water
  • 3 tablespoons chicken stock powder
  • 1 tea cumin
  • 4 tab tomato paste
  • 1 tea hot crushed chilli
  • salt and pepper

Method

  • Saute the onion in a small amount of olive oil until translucent
  • Add all the other ingredients and cook for approx 20 – 25 mins until rice is done.

Double dark chocolate sludge cake

450g dark chocolate
450g butter
200g castor sugar
250ml cream
8 eggs

  1. Melt the chocolate, butter, sugar & cream until smooth
  2. beat the eggs lightly
  3. slowly add the choc mixture to the eggs
  4. bake at 180oC for 45 mins
  5. let it cool it the tin, then refrigerate overnight (or at least 6 hours)

Choc glaze.

175g plain chocolate
30g butter

melt together then add

3 tab milk
2 tab golden syrup

Tip: to melt the chocolate mixtures place a Pyrex bowl on a saucepan of slowly simmering water on the stove top, stirring constantly.

Cheesy bacon and potato bake thingy

2 large spuds, sliced thinly
4 rashers bacon, cut into cubes
3 slices of butter
1 cup cheese, grated,
salt & pepper

  1. lay the spuds in the bottom of a microwave dish.
  2. season with lots of salt and pepper.
  3. put cubes of butter on top
  4. microwave for 10 mins
  5. top with bacon, then cheese
  6. Microwave for 3 mins
  7. enjoy.
